Me personally, I just manually create and reply to appointment requests rather than deal with Entourage. The only thing that you "need" Entourage for is things like accepting appointments sent from Outlook, particularly if your mail is Exchange based. (The included Mail, iCal and Addressbook all connect to Exchange servers so for basic things, they are quite sufficient. But ever since Mail could connect to Exchange servers, that's all I use now. On my previous Macs, I would have to use the old Outlook 98, then later just Outlook Web Access to get to my company's Exchange server. It can get POP3, IMAP and Exchange 2007 based email.
As stated, Mail, which is included with your Mac is quite stable.
